Dede Chicken Karahi

(It only became known Dede Chicken after Dede said he liked it so much and then asked Mehvish for the recipe)

  • 1 baby chicken cut into approx 12 pieces
  • 1 tin of chopped tomatoes
  • 3 cloves of fresh garlic cut into circular slivers
  • 2-3 tsp ginger cut into thin slivers
  • 3 medium-heat chilies, cut into circular slivers
  • bunch of coriander
  • 1 tsp turmeric
  • 1 tsp salt, or to taste
  •  sunflower or vegetable oil

Lightly cover the base of a wok or cooking pan with some oil, add the baby chicken, coating it in the oil, giving the chicken a bit of colour.

Add the turmeric and garlic and cook for a further 5 mins.  Add the tin of tomatoes to the pan. Cover and cook on a low-to-medium heat for 20 mins, stirring occasionally. If the chicken begins to stick add a few table spoons of water.

Once the liquid in the pan has reduced by half or more add the fresh ginger and chilies and cook for a further 5-7 mins, or until all the water has dried up.

Add an additional 2 tbs of oil and the coriander, stirring for a couple of minutes until all the ingredients are well incorporated.

Check the seasoning and serve with warm naan or roti.
